As the winter nights draw in theres nothing better than a bowl of fresh hot soup & this retreat favourite only requires a few ingredients, is easy to make, really delicious & of course healthy too!
Delicious winter warmer carrot & turmeric soup
Ingredients:
Serves 4-6
6 medium carrots, peeled and chopped
1 medium onion chopped
1 stick of celery chopped
2 cloves of garlic chopped
500ml organic vegetable stock
1 teaspoon of ground turmeric
Himalayan pink salt
Pepper
Extra virgin olive oil
Method:
Pre heat the oven 200 degrees, put the carrots into a roasting tray and toss in a little extra virgin olive oil oil and a little salt and pepper, roast for about 15 minutes or until soft.
In a pan heat a little oil and cook the onion, celery and garlic until soft, add the turmeric, carrots and vegetable stock. Bring to the boil then simmer for about 10 minutes and blend with a hand blender until smooth, check the seasoning and serve.
