Delicious spicy & healthy Thai soup ! 11/01/2017

If you are looking for a taste sensation of a soup thats also super healthy then try our Thai fish broth...

 

Healthy Thai Fish Broth

(Serves 4-6)

INGREDIENTS:

A thumb size piece of fresh ginger root peeled & finely sliced

4 cloves garlic finely sliced

2 medium cooking onions thinly sliced

1 stick of fresh lemongrass finely chopped

¼ - ½ teaspoon red Thai curry paste

3 limes leaves

1 litre organic vegetable stock

1-teaspoon fish sauce (optional)

Salt & pepper

1small carrot cut into thin slices

½ small courgette cut into small thin slices

½ red pepper cut into thin slices

1head of pak choi sliced

A small handful of fresh coriander leaves, chopped

200g small thin slices of fish (bones removed) monkfish is delicious in this dish

METHOD:

Cook onions, garlic, ginger & lemon grass in a suitable pan with a little coconut oil until soft.

Add the curry paste, fish sauce, if using, and coat the onions.

Pour in the vegetable stock and bring to the boil for a couple of minutes, then add all the vegetables and fish then turn off the heat, let the broth stand for 5 minutes and add the coriander, season to taste and serve.
