A really COOL soup! 01/08/2016

Gorgeous gazpacho

Ingredients:

 

Serves 4

1 Red onion, peeled & chopped

2 Cloves of garlic, peeled & chopped

1 Red pepper, deseeded & chopped

½ Cucumber, peeled and chopped

4 ripe tomatoes remove the core then chop

50ml organic unfiltered apple cider vinegar

500ml good quality organic vegetable stock

3 Tbsp high quality Extra Virgin Olive oil

1 Tbsp organic honey

Pinch of pink Himalayan mineral salt & a pinch of white pepper

 

Method:

Place all the ingredients into a high power blender & then blend until smooth. Place the soup in the fridge for at least 2 hours or  better overnight to allow the flavors to develop. If the soup is too thick,  just add a little water…
